Café 100 “Spring Forest” Afternoon Tea is an assortment of 8 savories and sweets for relaxing and indulgent springtime treats. Begin your culinary adventure with baby asparagus and quinoa tartlet, with delicate crust perfectly wrapping the tender asparagus, quinoa and lemon. The combination of wheat grass and fresh shrimps in the sandwich adds a refreshing twist, while the red raspberry jam and seaweed foie gras cream pair perfectly with crispy blinis. The mushroom puffs, infused with wild mushrooms and black truffles, offer a rich and smooth texture that will leave you wanting more. The deserts are just as impressive, with Pistachio verrine panda cotta that is sweet and tangy, adding a hint of nuttiness. Pistachio and raspberry tart is topped with the fresh raspberry, which adds a pop of color and a burst of freshness to each bite. The Matcha cheesecake sable breton is a standout, with the creamy cheese balancing the subtle astringency of the matcha.
